Unlike more expansive regional sweet wines, the production of Vin Santo di Carmignano DOC is restricted to just two Tuscan municipalities: Carmignano and Poggio a Caiano. Recognised since 2004, this denomination mandates a minimum of 75% Trebbiano Toscano and Malvasia Bianca Lunga, pressed between December and March. The wine undergoes slow maturation in small caratelli barrels restricted to a maximum capacity of 3 hectoliters. This prolonged wood contact yields an ethereal wine with a high minimum alcohol content of 16.0% vol. It cannot be released for sale until November of the third year following harvest, requiring approximately 36 months of aging.
