Covering twelve Tuscan municipalities, including Arezzo and Cortona, the Valdichiana toscana DOC is shaped by just 11 verified producers. While the base rosso relies on a minimum of 50% Sangiovese with a maximum yield of 11.0 tonnes per hectare, the appellation distinguishes itself through its rigorous Vin Santo regulations. Unlike generic sweet wines, this passito requires Trebbiano Toscano and Malvasia Bianca grapes dried to at least 26% sugar, fermented and aged for at least two years in wooden vessels of maximum 500 liters capacity. Crucially, the final Vin Santo must be bottled in containers of maximum 0.75 liters, sealed with a cork flush with the bottle mouth.
