Recognized since 1976, the Primitivo di Manduria DOC spans nineteen Puglia municipalities, including Avetrana and Erchie. Unlike neighboring red wine regions, this denomination strictly bans the use of second-harvest grapes, declaring that only grapes from the vine's first fruiting are allowed, with 'femminelle' or 'racemi' entirely excluded. Vineyards are capped at a maximum yield of 9.0 tonnes per hectare. The resulting wines must achieve at least 13.5% total alcohol by volume for the base type at consumption, while the Riserva version demands twenty-four months of aging, including at least 9 months resting in wood.
