Established in 1973, Campania's Greco di Tufo DOCG restricts its production to just eight municipalities, including Altavilla Irpina and Santa Paolina. What distinguishes this denomination from other regional whites is its rigid composition and sparkling versatility: it mandates at least 85% Greco bianco grapes, paired only with Coda di Volpe bianca. Uniquely, its sparkling variants must be produced exclusively using the metodo classico, requiring a minimum of 18 months of aging on the lees—or 36 months for the Spumante Riserva—reaching at least 12.00% alcohol by volume. Still Riserva bottles must age for 12 months starting November 1st of the harvest year.
