While the dry white wine must contain at least 60% Trebbiano Toscano and reach a minimum alcohol level of 11.0% vol, the denomination is uniquely distinguished by its Vin Santo production rules. Unlike the standard Bianco, this dessert wine specifically excludes Moscato Bianco from its complementary varieties. Additionally, the Vin Santo's yield from grapes to wine is restricted to just 35% to reflect the concentration from drying, compared to 70% for the standard white.
