Established in 2004, the Arcole DOC spans 21 municipalities across the provinces of Verona and Vicenza, including Albaredo d'Adige. While the base Arcole Rosso relies on at least 50% Merlot, the denomination distinguishes itself through specialized styles and generous production allowances. Uniquely, the grape-to-wine yield is capped at 70% but features an 80% partial forfeiture threshold, which is higher than most other DOCs. For its distinctive Arcole Nero, winemakers must subject at least 50% of the grapes to a natural appassimento process lasting a minimum of 30 days, reducing the maximum yield to wine to 45% and requiring a minimum alcohol content of 13.5% volume.
