Recognized since 1973 across 257 Pugliese municipalities, including Alberobello and Alessano, the Aleatico di Puglia DOC distinguishes itself from neighbouring dry-wine appellations by focusing entirely on sweet, aromatic red wines. Vinified from at least 85% Aleatico grapes, which undergo a light withering on the vine or mats, the denomination permits two distinct dessert styles: a Dolce Naturale and a fortified Liquoroso Dolce Naturale. The latter requires a minimum total alcohol content of 18.50% volume. Uniquely, both styles can achieve Riserva status through three years of patient aging, measured from the harvest's following January or from the date of fortification for the liquoroso.
